I think I've caught the canning bug! On Tuesday we had Bible study and afterwards I went past a friend from church and ended up coming home with loads of apples...mackintosh apples! Yum! I had been eyeing off a recipe which intrigued me which was "Apple pie in a jar"! I could see the sense in having the 'stuff' all ready in a jar and it would simply be a matter of getting the pie shell and top and dumping the contents, and tra la la: you have apple pie!
So together with Anthea, we peeled and cored (well, a nifty little machine did that), and then cut them into quarts and with a cinnamon syrup, filled the jars and put them in the canner. The result: 7 jars of apple pie mix all ready to go!
My canning shelves are looking quite productive. I just love going in there and looking at the produce!
On Wednesday I spent the day in Bellingham doing lots of odds and ends and Taleesha got to spend the day with her friend Cassie. Apparently they had loads of fun! And lots of giggling! They even got to sit in the tractor which was cutting the corn! The idea was for her to come home when school finished but both girls wanted to play together longer so she ended up staying the rest of the afternoon!
On Friday evening as well as Saturday morning, Steve attended some lectures presented by Dr Nelson Kloosterman. They were held in the URC church in Lynden and the topic was "Shining the light: Church leadership for the sake of the church's mission". It was thought provoking and he enjoyed the topics that were raised.
For those interested, the sessions can be listened to at
This afternoon, Bernice and myself picked some 70-80 pounds of apples. We have our work cut out. The plan is to make apple pies and applesauce.
Next week Monday evening and Tuesday it's apple pie days. The committee (of which I am also in) has orders for 500 apple pies, so that will be a busy day and evening!
For the rest, everything is going well. We thank God for His mercies new every morning. Anthea has settled in at her job and is enjoying it too.
Jaclyn and Stefan are busy with homework and soccer practice and games. What a blessing that Jaclyn has her license. She does the bulk of the driving including the daily school runs as well as soccer training and catechism.
Shantel has settled in year 1 and generally is quite happy to do her homework. She has spelling words to learn, sight words to learn, memory work and book reading. Last week she had to learn adding doubles.
Taleesha is quite happy to play at home on her own but she is opening up and learning to communicate and socialise with other kids now that Shantel is not around! She knows her numbers from 1-8 and we are now learning 9 and 10. I have started with her name and very briefly doing the alphabet.
Steve is kept very busy with school. Marking needs to be kept up to date as these marks reflect whether a student is allowed to do the sport practice that week. If they have a 'F', they are not allowed to participate. In addition, Steve also attends a choir in Langley every week. They plan to perform sometime in January (I think!).
Well, that's this weeks recap. Thanks for popping past!
